The new prickly pear cactus or Nopalitos which I guess is from the word "Nopal" or cactus. Nopalitos means little cactus. Anyway, it is a Mexican delicacy that tastes much like okra. I'm sure there are many ways that it is eaten the way I've had it is with scrambled eggs and onions or fried much like you would fry okra.
